Grace's Chiles Rellenos


Hi Y'all! The scrumptious dish is to die for! The is something my mother used to make frequently and I thought I would share it with you! This side dish is great with anything, especially Mexican food or add a breakfast meat to jazz up the first meal of the day. Enjoy

1/4 C. of butter or margarine
1 (7 oz) can diced green Chile's or more for extra zing!
1 lbs. Cheddar or Jack Cheese (or 1/2 of both)
3 eggs
3/4 TSP. of salt
2 C. of Milk
1 C. of Biscuit mix

Melt the Butter in a 13x9 in. pan.
Arrange Chile's in a layer at the bottom of the pan.
Cover with cheese.
Blend eggs, salt, milk and biscuit mix in separate bowl.
Pour mix over cheese and Chile's.
Bake at 350 degrees for 30-40 minutes or until golden.
Makes 6-8 servings.
